Speedy Stir-Fry

Hello,
  
Been meaning to post, but my weekend was a bit busy, but it was tons of fun!

Saturday night, I made Honey Chicken Stir Fry.
The recipe I found called for Frozen Stir Fry Vegetables.  Not I normally would buy everything fresh, but was in a bit of a hurry, so it was okay to cheat=)

My cousin Erika was at our house, so she and my sister Rachel took some pictures for me.
The recipe said to stir fry the chicken for a bit and then add the sauce, but the next time I make it, I'm going to make the sauce ahead of time and marinate the chicken in it for a while.

Haha, Erika was very interested.


Made some basic White Rice for the Stir Fry to go on top of.  
It was a very yummy dinner indeed.

Top of a wedding cake, four years late...

Hello dears,

Yesterday, was some very good friends of mine, Curt and Julie Shrock's fourth wedding anniversary.  
They are the most beautiful couple you will ever meet. 
They never got the top of their wedding cake.
So I went to babysit their 7 month old son Moses, while they went for dinner.  While they were gone, I baked them a cake.  I couldn't find the powdered sugar for frosting, so Moses and I took a walk to the grocery store, which is about a block or two from their house.  We picked up some pre-made frosting, not something I normally do of course=)
  
This picture was taken on my phone, so not the best quality.
It was just a chocolate cake with chocolate fudge frosting.
The flowers were from Curt to Julie=)

They were so surprised to see the cake and even more surprised that I remembered they didn't get the top of their wedding cake.

The first pie of the season

Hello dears,

Today just seemed like a day to make a pie.
I was going to make a classic Blueberry Pie, but decided to try something new.
We picked a bunch of blueberries last summer, as we do every summer, and freeze them.  So we always have some on hand.

*Celebrate with Carrot Cake and some Cinnamon Rolls for Breakfast*

Hello dears,

Yesterday, was my brother Aaron's 20th birthday.  His favorite cake is Carrot, so that's what I made him.
We also had steak for dinner along with Twice Baked Potatoes (didn't get a picture, sorry) and a salad.  Three of his greatest friends came for dinner along with his lady Kara.


It called for 2 cups shredded Carrots, to make the process go faster, I put the carrots in the food processor.


All mixed up and ready to bake!


The frosting was a cream cheese frosting, the best stuff ever!!


After dinner, we had some family come over to celebrate.  


Just a slice all ready to eat.

We had some ice cream as well and along with the carrot cake, his lady made a chocolate cake.

Also, yesterday, I put together some cinnamon rolls, recipe by Alton Brown.  They sat in the fridge overnight and when I was ready to bake them this morning, our oven wouldn't preheat!!  So I had to walk over to my grandma's house to bake them.


The frosting had cream cheese in it, I'm telling you, that stuff makes everything 10 times better!
I used Spelt flour, so they weren't quite as squishy as they would be if I would have used white flour.



But they were still super good!!

Saturday Night Lasagna

Greetings,

Tonight, my aunt, two cousins, and Grandma came over for dinner.  
So I made Lasagna, along with Garlic Bread, and a Salad.

For the Lasagna, I used Cottage Cheese in place of the Ricotta Cheese.  It gave it a bit more creamy texture, very yummy.  Also used Rice Lasagna Noodle, honestly, they taste just the same as regular 'ol pasta.  Just a bit more expensive=)

For the Garlic Bread, I bought a loaf of French bread, cut it in half long ways, buttered it, sprinkled on some Garlic Powder, and broiled it until the edges were brown.  The I put the loaf back together and cut it into squares.

For the Salad, I cut up some Romaine and Head Lettuce, Sliced some Cherry Tomatoes, and shredded some carrots.
Just had pulled it out of the oven
A pretty fine dinner.

*Welcome*

Hello!!!

Yesterday morning, I made my dad an Omelet. Omelets are one of my favorite things to make, you can do so much with them.

For the filling of this omelet, I put in Pepperoni, Tomatoes, and Mozzarella Cheese. Also, while beating the eggs and milk, I sprinkled in some Garlic Powder and Basil.

He did enjoy it!!  It's always so lovely to hear that someone likes what you've cook.

Later on in the day, I decided to make some Brownies.

For dinner, we had breakfast!!
