Weekday Summer Meals and Treats...

Hello all,

Haven't had the chance to post the past couple days.  But here are the thing that I made=)

Monday, I made a Mixed Berry Pie.

That night for dinner, I made Italian Beef for Sandwiches. 

Along with Oven Fried French Fries.

Tuesday night, I made Chicken Cordon Bleu for dinner.

Some steamed Broccoli to go along with it.

And today, I made a Chocolate Cheesecake!

Fourth of July weekend is just around the corner, and I am super excited!!

A few sweets to share

Hello all,

Well the past few days have been pretty busy for me.  But managed to fit in some sweets!!

Raspberry Coffee Cake for our Bible Study Thursday night.
Alton Brown's Cinnamon Rolls for breakfast Friday morning.  My brother's band, The Great Flood Catastrophe, was playing a show that day, and the band plus some friends were going to be there that morning.  So I thought, Hey, Cinnamon Rolls are always good!


Blueberry Buckle for a meal after church tomorrow.

Another Stir-Fry

Hello all,

Well for dinner last night, I made another Chicken Stir-Fry.  It's probably getting old just seeing Stir-Fries on here.  They are fun to make though!
For the veggies I used Broccoli and Bean Sprouts

Chicken Enchiladas

Happy Tuesday!!

So tonight for dinner, I made the Chicken Enchiladas that I was going to make last night.

And of course, a Salad.  Forgot to put the dressing on for the pic=/

Also, big news for today, I donated $240 to Operation Smile!!!  It always makes me so sad to see a child with a cleft lip, so I thought, it's time to make a difference!!

Chocolate Cream Pie

Made some Whipped Cream for the top.  It didn't thicken like it should have, but it was still yummy!!

Tonight for dinner, I was going to make Chicken Enchiladas.  But we were out of Green Chillies and that is a very key ingredient in the recipe.  I had already cut up the Chicken, found some Apricot Preserves in our pantry, and searched the web, and found a recipe for Apricot Chicken.
It was really tasty.  Would like to make it again and add some veggies to it.

Successful Sweets!

Good day!

Goodness, gracious!  37 followers and 21 comments on my last post!!  It's all too much, thank you all=)

Friday night, my brothers band, The Great Flood Catastrophe, had a show.  I go to about 85% of their shows and sell their merchandise for them.  So most times, I make some kind of goody and have in on a plate for people to come and take.  It helps the merch sales, for sure!;)
So I made a Raspberry Coffee Cake.
Pretty much, roll the dough out into a rectangle.  Spread a mixture of Cream Cheese, Egg, Sugar, and Vanilla on top.  Then spread Raspberry Jam on half of it.  Roll it up, let it rise for a bit, bake, frost, then eat!

First time trying it, and it got a lot of great feedback.  Everyone who tried it, loved it!  It's always so sweet when people tell you something you've made is good.

Today, we went to my grandpa's for Father's Day.  He loves Chocolate Chip Cookies, but I was on a time crunch, so I just made Chocolate Chip Cookie Bars.


People always go for the middle!
They got eaten, and my grandpa loved them!  So I'd say, a success indeed.

What my dad wanted to do for Father's Day, was stay home and relax.  He had a looong week.

First lake day and a laid back dinner...

Hello all,

Oh goodness, all of this feedback has been marvelous!!  I am just shocked!

Yesterday, was our first trip to the lake.  My granny lives on a small lake about a half hour from our home.  My cousins Ian, Erika, Emma, Elijah, and Zeke met us there.  And my good friend Morgan came along as well.  I brought some Lasagna, Breadsticks, and a Salad for dinner.  Sadly, did not get a picture of any of it=/  But I hope you all don't mind looking at a few pictures from the day!!

Our boat stalled in the middle of the lake, and this kind sir pulled us into shore.
Ian took the little boys home, and we had a game of Croquet!
I was a bit behind...
...but I caught up!
Morgan and I just chilling.  We both decided that neither of us would fit in the Red Rocket.  Haha.

So after the game of Croquet, we watched To Kill a Mocking Bird and had some ice cream.
What a fun day.

On to the food!
                                     
Today, I made some Cinnamon Doughnut Muffins.
Mix the batter together, and fill some muffin tins half way full.  Put about a teaspoon of Jam on top, and then place some more batter on top so that the muffin cups are about three-fourths of the way full.
We had a pretty simple dinner tonight.  Just grilled some Hamburgers and Bratwurst.
For a side dish, I put together my own Black Bean salad.
                                      
Black Beans, Garbanzo Beans, Diced Tomatoes with Green Chillies, and then just guessed at the rest.

Well, tonight we are off to catch the midnight showing of Toy Story 3!!
