Raspberry Cream Streusel Muffins

Hello all!!

Hope everyone had a wonderful 4th of July weekend.  I know I sure did=)

Today, muffins just sounded super nice.  So that's what I decided to bake.

This recipe can use either Blueberries or Raspberries, and they are ever good both!!

As you can probably already tell, I love baking with berries.  Especially in the Summertime.  Just a very summery nice thing.

Enjoy the day!!

Thanks to those for your lovely comments on my last post, it was all too kind!!=)

This weekend, my family and I are headed to my Grandma's house.  She lives on a lake about 30 minutes from our house.  It's been a tradition for as long as I can remember, for all of us to head there for 4th of July weekend.  It's always a blast, all of our family is there and we invite friends to come as well.  Wonderful times indeed, and really looking forward to this weekend.

I made a couple desserts to take along with us.

Coconut Cream Pie

Snickerdoodles

Hope you all have a marvelous weekend!!

A few sweets to share

Hello all,

Well the past few days have been pretty busy for me.  But managed to fit in some sweets!!

Raspberry Coffee Cake for our Bible Study Thursday night.
Alton Brown's Cinnamon Rolls for breakfast Friday morning.  My brother's band, The Great Flood Catastrophe, was playing a show that day, and the band plus some friends were going to be there that morning.  So I thought, Hey, Cinnamon Rolls are always good!

Blueberry Buckle for a meal after church tomorrow.

Chicken Enchiladas

Happy Tuesday!!

So tonight for dinner, I made the Chicken Enchiladas that I was going to make last night.

My mom and I's pan, made with Spelt Tortillas.
And of course, a Salad.  Forgot to put the dressing on for the pic=/

Also, big news for today, I donated $240 to Operation Smile!!!  It always makes me so sad to see a child with a cleft lip, so I thought, it's time to make a difference!!

Chocolate Cream Pie

"You know what I love about cooking?
I love that after a day when nothing is sure,
and when I say "nothing" I mean nothing,
you can come home and absolutely know that if you add
egg yolks to chocolate and sugar and milk,
it will get thick. It's such a comfort."

Made some Whipped Cream for the top.  It didn't thicken like it should have, but it was still yummy!!

Tonight for dinner, I was going to make Chicken Enchiladas.  But we were out of Green Chillies and that is a very key ingredient in the recipe.  I had already cut up the Chicken, found some Apricot Preserves in our pantry, and searched the web, and found a recipe for Apricot Chicken.
It was really tasty.  Would like to make it again and add some veggies to it.
