End of summer treats and a Fall trip....

Hello all,

Goodness, had it really been over two weeks since my last post?!  Wow, time flies.  Can't believe the first day of September is tomorrow!!
I really have been cooking/baking, just seem to eat it before the camera has time to take the photos!;)  Tehe.

A few days ago, I made one of my best friends a Coconut Cream Pie.  Even when it sat in the car for 3 hours, it still tasted good!=)

Making progress on the Harry Potter books.  Just about done with the 4th one.

Got a job at a coffee shop...!!!  I was hired about two weeks ago.  It's been great so far.  It's about a 20 minute drive for me one way.  This morning, we were super busy, which was great.  So grateful to have a job, cause I know how difficult it has been for people to find one.

On to cooking.

Since I've been waking up at 6 for work, I've decided to made quick breakfast food.
So yesterday, I made some Morning Muffins.
They have shredded Carrots, Coconut, and Raisins in them.  Yum.  The recipe called for chopped nuts, but I didn't add them.

For dinner, I made Chicken Fettuccine Alfredo.
The recipe called for Half and Half, but I used one part Chicken Broth and two parts Milk.
It turned out yummy, I had seconds!!=)

Also, I am taking a little trip at the end of October!!
My sister Rachel, is a HUGE Harry Potter fan.  And ever since we found out about the new theme park in Universal Studios, she has been wanting to go and had a fund saved up for the ticket.
The park opened June 18th.  Well, I've been telling her how we are going to go someday and how I am going to take her.  Like we never thought it could happen.  But I was dead serious.  So I talked to my parents about wanting to take her.  So on October 25th, we are flying out of Indianapolis to Orlando, staying the night in a super cool hotel, the 26th spending the whole day at the park, and flying back home the 27th.  I secretly planned this and surprised her with the trip, paying for her plane ticket and park ticket.  My brother's band played a show at our house, and I played a set with my cousin Ian, brother Aaron, and friend Morgan. So during the set, I had her come to the front and told her the plan.  She cried.
So yes, very excited about the trip.
This is a photo from the opening ceremonies, it's going to be so magical.

Hope you all are having a wonderful day!!=)

  1. OMG! Congrats on the job--especially it being at a coffee shop! I've always wanted to be a barista. Maybe you'll get to learn new recipes to bake with!
