Chicken Dinner!

Hello all,

This past Friday, I turned 18!  We had quite a party at our house, about 46 were there total.  We played some games, hung out, danced, ate, and just had a lovely time.
A friend of my moms made the cake for me.  Homemade cake is really the best.  Everyone had a piece and loved it!!
Here's a photo of the whole group!  Still can't believe how we all fit in.

So my dad is going on a Low Carb Diet.  So my mom and I have been searching for Low Carb recipes.
Tonight for dinner I made Cottage Cheese and Spinach Stuffed Chicken.
 You rub the chicken with Cajun Seasoning and place a mixture of Spinach, Cottage Cheese, and Onion in the center on a Chicken Breast.  Role up and secure with a toothpick and bake at 350 degrees for about a half hour.
 The flavors were really pretty fantastic!!
And of course, gotta have a salad! ;)

Blizzard in Indiana!!!

Hello all,

This past week, here in Indiana, we got quite a lot of snow!
Schools have been closed for the past couple days, and I believe there are some delays for tomorrow.
At my home, we got about 8 inches with drifts a lot higher than that.
Other places got hit worse.

So while being snowed in for a day or two, may as well do some cooking right?
My stomach was craving Coconut Cream Pie, so that's what I made!!
It's a very rich pie, a little can go a loooong way!!!  Haha.

Too long....

Goodness!!

It has been far too long since I've blogged.
I got a job at a Starbucks in a grocery store, and have been enjoying that loads!!

Christmas was a blast, although my family and I were sick the week before, but thankfully were better by Christmas day!

New Years Eve, we had some friends over and had a lovely party. Danced until 2 am! Phew.

As for cooking, I have been doing not as much as I'd like, since I've been working so much.

A couple weeks ago, one of my best friends and I made breakfast. I had Scramble Egg duty and he was on Pancakes.  Which in reality, neither of us had really made what we were making and bother were better at what the other was making.  But it was a good learning process! As I was making Scrambled Eggs I heard this gasp from Morgan, and I turned around to find a half down pancake on the floor.  The poor kid had a bit too much energy flipping the pancakes and the griddle was never close to the edge!  Needless to say, it was hard to keep our laughter in.

Asparagus was on sale at the grocery store I work at for $1.68 per pound!  So I bought 3 pounds :)
Along with the steamed Asparagus, I baked some Chicken, Rice, and made for the first time Hollandaise Sauce!! The recipe was from Barefoot Contessa.  The sauce separated a bit, but the meal was delish!  If I do say so myself ;)
