Chicken Dinner!

Hello all,

This past Friday, I turned 18!  We had quite a party at our house, about 46 were there total.  We played some games, hung out, danced, ate, and just had a lovely time.
A friend of my moms made the cake for me.  Homemade cake is really the best.  Everyone had a piece and loved it!!
Here's a photo of the whole group!  Still can't believe how we all fit in.

So my dad is going on a Low Carb Diet.  So my mom and I have been searching for Low Carb recipes.
Tonight for dinner I made Cottage Cheese and Spinach Stuffed Chicken.
 You rub the chicken with Cajun Seasoning and place a mixture of Spinach, Cottage Cheese, and Onion in the center on a Chicken Breast.  Role up and secure with a toothpick and bake at 350 degrees for about a half hour.
 The flavors were really pretty fantastic!!
And of course, gotta have a salad! ;)

Blizzard in Indiana!!!

Hello all,

This past week, here in Indiana, we got quite a lot of snow!
Schools have been closed for the past couple days, and I believe there are some delays for tomorrow.
At my home, we got about 8 inches with drifts a lot higher than that.
Other places got hit worse.

So while being snowed in for a day or two, may as well do some cooking right?
My stomach was craving Coconut Cream Pie, so that's what I made!!
It's a very rich pie, a little can go a loooong way!!!  Haha.

Too long....

Goodness!!

It has been far too long since I've blogged.
I got a job at a Starbucks in a grocery store, and have been enjoying that loads!!

Christmas was a blast, although my family and I were sick the week before, but thankfully were better by Christmas day!

New Years Eve, we had some friends over and had a lovely party. Danced until 2 am! Phew.

As for cooking, I have been doing not as much as I'd like, since I've been working so much.

A couple weeks ago, one of my best friends and I made breakfast. I had Scramble Egg duty and he was on Pancakes.  Which in reality, neither of us had really made what we were making and bother were better at what the other was making.  But it was a good learning process! As I was making Scrambled Eggs I heard this gasp from Morgan, and I turned around to find a half down pancake on the floor.  The poor kid had a bit too much energy flipping the pancakes and the griddle was never close to the edge!  Needless to say, it was hard to keep our laughter in.

Asparagus was on sale at the grocery store I work at for $1.68 per pound!  So I bought 3 pounds :)
Along with the steamed Asparagus, I baked some Chicken, Rice, and made for the first time Hollandaise Sauce!! The recipe was from Barefoot Contessa.  The sauce separated a bit, but the meal was delish!  If I do say so myself ;)

Pumpkin Treats from Bloggers!!!=)


This post, as you can tell, is a group post!! I was asked a couple months ago to be in on it, and now is the time to post it!!=)

For my part in this group post, I made Pumpkin Spice Cake with Cream Cheese Frosting.
I got this recipe from Taste of Home and added some extra spices to it.  Haven't heard a bad thing about it!!
Actually, gave it to a friend as a birthday present.  And everyone who tried the cake in his family wrote a note to me about how much they liked it!!


The next lovely lady is Carmen, from Baking is my Zen...sweet nibbles for the soul.
For the Pumpkin Post, she made Pumpkin Gooey Cake, which looks wonderful!!
 "After making fat free desserts one Thanksgiving, everyone in my family missed the Pumpkin Gooey Cake. It is now a must that I bake this cake for Thanksgiving."-Carmen

Catching up!!=)

Hello all!!!=)

Goodness, I'm getting really slow at this Blogging.  Life has been a little busy, so haven't had much time to post what I've been cooking lately, which has thankfully been quite a bit!!


 I can't remember exactly what this recipe was called, but it was pasta with Chicken, Artichokes, Cappers.  The sauce was a mixture of Lemon and Cream Cheese.  Super yummy!!
 I also made French Bread to go along with it!!

 Made a Pumpkin Cheese cake, which was wonderful!!
 This Creamy White Chili was wonderful, if I do say so myself!!;)

 That night I made an Apple Crisp, with Apple Pie filling we had in the freezer.  Forgot to put in the Oats..oops!!
My sister Rachel and I watched Julie and Julia!!=)  Watching that movie is bad sometimes, cause you just want to eat and cook all the time!!!  haha.

The next week, we loved the Apple Crisp so much, I decided to make more!!=)
 This time I remembered the Oats ;)



My dad, Rachel, and I are HUGE fans of the A&E series of PG Wodehouses: Jeeves and Wooster.
Soooo, we watched a couple that night!=)

This past Satuday, Rachel and I went with our cousins to an Apple Orchard.
All of the good apples were on the tops of the trees, of course.  The signs said NOT to climb the trees.  But my cousin Ian (who is my age) and I didn't really follow the rules..haha.  But we sure got some wonderful apples!!=)
So I made a pie with some of them, and probably could make 4 more!!


Besides all of this, I've made a lot more.
A few meals for my brother's band, which included: Italian Beef Sandwhiches one night.  Mac and Cheese and Sandwhiches another night.

Last week, we had some friends over and I made Chili and Corn Bread.  I didn't have a dessert made, so a little before dinner I asked my dear friend Morgan what I should make.  He suggested Cinnamon Rolls, and so that seemed like a wonderful plan to me, so I made some!!

Alas, didn't get any pictures of any of it, which is a bummer=/

Rice Pudding

Hello all,

The other night, I made some Rice Pudding.

It was just my mom, sister Rachel, and I home that night.  It was quite nice.


Rice Pudding is pretty much Custard with some cooked Rice in it.  This recipe called for some Raisins, so that added some sweetness to it.
It was super yummy!!=)
